I love this recipe...

Almost no stir saffron risotto, reprintable here thanks to creative commons. Based on Rebecca's recipe and something from Cooks Illustrated.

Categories: Beans, Rice, & Grains

Servings: 4-6

Ingredients:

2 c. arborio rice
1/4 t saffron
2 T olive oil
1 red bell pepper, chopped
1/2 yellow onion, minced
5 c. hot chicken or veggie stock
1/4 c. parmesan [reggiano if poss.]
1/2 c. dry white wine
salt
extra veggies/meats to taste

Directions:

Saute onion and pepper in oil in deep saucepan until well-cooked, 3-6 min.

Add rice and stir until well coated.

Add 3 cups hot stock & saffron.

Stir & lower heat to simmer.

When most liquid is absorbed, add wine.

Add remainder of liquid slowly, stirring constantly for remainder of cooking time [10-15 min].

Add extra veggies/meats during this time. Good additions are chopped spinach, blackened chicken, green pepper, lots of garlic, steamed beets, or roasted corn, 1/4 c. at a time. Salt to taste.

When all liquid is absorbed, add cheese & stir in.

Serve topped with grated cheese, chopped cashews, or minced red bell peppers.

The oldest thing I own

Probabaly something from my coin collection and I'd know more specifically if I could read Chinese. Beyond that, it's got to be books. My creaky Encyclopedia Britannica (9th, not 11th edition, I'm not THAT cool) would rank right up there.

On this day we celebrate the Barnette decision. West Virginia State Board of Education v. Barnette, 319 U.S. 624 , was decided by the U.S. Supreme Court on flag day, 1943, overturning a law which made it compulsory for students to salute the flag and recite the pledge of allegiance. (The law made parents and guardians of students who disobeyed subject to prosecution - not that this was the reason for overturning the law.) The Barnette family were Jehova’s Witnesses, who believe that saluting the flag and reciting the pledge of allegiance is placing a temporal power above God; they take the command in Exodus as applying to the pledge and salute: “Thou shalt not make unto thee any graven image, or any likeness of anything that is in heaven above, or that is in the earth beneath, or that is in the water under the earth; thou shalt not bow down thyself to them nor serve them.”

The crab spider lives in this little flower and changed color subtly to blend in with it. I'd show you the other spider picture -- the yellow spider on the yellow flower --  but Vox only shows me the last 15 pix or so [whatever is in the RSS feed?] so I'll have to link to this one instead.

My Genealogy

Well it's a mashup. My Dad's family is 13 generations of Wests going back to the 1650s in New Hampshire. My Mom's dad came over on the boat from Russia, same with her mom's family. No suprise the marriage wasn't a smashing success.

Knowing that I have relatives that lived in Vermont in the 1800s makes it a little easer to assimilate up here now.
